Hi loves! Another yummy dish went down! I did it with tilapia, but any white fish or chicken would work perfectly!!! :)
It ended up being a WINNER!!! The sauce is soooo refreshing, it's a perfect summer dish! Let me know what you think! I served mine with the roasted brussel sprouts and broccoli because I think I may have a serious obsession with them! They are just soooooo yummy! Here's the link to the recipe for those here.
Ingredients:
Blackened Fish (or chicken)
4 - fish fillets
1 Tbsp blackening seasoning
Avocado Cream Sauce
1/3 cup plain greek yogurt
1/2 avocado, chopped up (I may or may not have used a whole one!) ;)
1 Tbsp lemon juice
1/2 tsp garlic powder
1/8 tsp salt
1/8 tsp pepper
Put all of the cream sauce ingredients into a food processor and blend until smooth and creamy! :)
1. Preheat the oven to 400 degrees. Season the fish well on both sides with blackening seasoning..(it may take more because this depends on your "hot" tolerance
2. Bake fish for about 15 - 20 minutes until it's cooked through and flakes easily with a fork. (if you are cooking chicken you will need to adjust the cook times)
3. Top with a dollop of the avocado cream sauce. (um, I may tend to put a little toooo much on mine, it's just sooooo delish!!!)
